Weekend...

Finally the weekend has arrived... as much as I love my job, this week has been loooong... well probably because I was working till midnight Friday and was out partying  on Saturday. 

Tonight my husband is at his company's Christmas party, so Jonas and I have been hanging out and having fun. For me dinner when home alone is almost always nachos... I love nachos, and my husband, well not so much, he sees it as a snack. Well let's just say I don't mind my dinner being a snack... a large snack. As always I end up making to big a portion, but my eyes can always eat more than my stomach.

Since Jonas isn't into nachos either, well he like the tortilla chips, but you can't feed your kid that for dinner (yeah I know double standards). He had a piece of bread/sandwich and a yogurt, and as a Friday treat he was allowed to eat in front of the TV.

April seems to fly away...

I can't believe the first week of April is all ready gone, and it seems like I can't keep up with the rest of the month. All our weekends in April is booked, either with work, parties etc. I'm not sure I really looking forward to all of it. 

This weekend we only had plans for today. Well Jonas had his swimming class yesterday morning, and as always we really enjoy that time. He loves being in the water, and it seems like he loves climbing out of the water and jumping in even more.

Today we went to visit a couple of friends that are expecting a baby in just a month. I have known her since kindergarten, but we haven't seen each other since January, so it was good to see them again one last time before she gives birth. We were invited to lunch and as always it's not just a simple lunch, the food is always amazing, and I always seems to overeat. 

Today overeating turned out to be a good thing, because I had taken some fish out of the freezer for us to have for dinner. But after it had defrosted I didn't think it looked good, and didn't smell too good either, so that ended up in the trash and we had some leftovers from yesterday instead, there wasn't that much, but with some fries and my overeating at lunch it did the job. 

I think I might be heading to bed early tonight, so I can fill up on energy for the next month... right now I really looking forward to my day off on Tuesday:)

Cooking with Connie

 Well I figured it was time for another Cooking with Connie post, and this time I am actually cooking and not baking! The nice summer weather has returned to Denmark, which meant we did a little BBQ. My go to recipe, which me and my husband loves in marinated chicken, marinated in a BBQ dry rub.
 Here we have the ingredients:
2 teaspoons of paprika
2 teaspoons of chili powder
2 tablespoons of brown sugar
1 teaspoon of onion powder
1 teaspoon of cayenne pepper
1 teaspoon of pepper
1 teaspoon of mustard powder
2 teaspoons of salt
 Mix it all together, and rub it on the chicken fillets, and let it set for at least 30 minutes.
 Put on the grill, first directly over the heat, and the move them to the middle, and put on the lid. I use a thermometer to check if they are done.
Served with some salad, bread and a glass of wine. How much better can a Sunday evening get? Except it looked like it might be raining so we had to eat inside, but I guessed we should have stayed outside, now dinner is over, Jonas is in the tub and it is still not raining:)

Brunch

Last week was pretty much a week of eating... I guess in some ways I was celebrating not having to update you guys on the babyweight challenge.


On Thursday we went out to brunch at a cafe down by the harbour. In different cities in Denmark they have recently started selling what they call sweet deals, you are offered all different things to a really good price, and you got to be fast because there is only a certain amount for sale of each deal. We had bought a sweet deal for Brunch which was 50% off...

We had the best brunch, the service was so great and we really enjoyed ourselves. The weather was great so we did go for little walk at the harbour, though thats the thing... the harbour area is still very much industrial.... they are starting to convert it to a usable place since there is hardly any fishing done from Esbjerg anylonger, but I'm sure it will be great when it's all done.

Yesterday was my sister in laws birthday and she had invited us for brunch at her apartment, so once again I was eating... it was a really great brunch, and she had baked the best brownies (I might have had more than one).


So after eating the whole week I was a bit afraid to step on the scale this morning. Yeah I still keep track on my weight every Monday even if I'm not updating you guys... but I had lost almost 1 kg since last week... had I only known that brunch was the way to go I would have been skinny by now:)
